A Pulled Pork Feast

I thought I would take a second to appreciate the fine art of cookery that my boyfriend has mastered. We are huge foodies but I will be honest and admit to not enjoying the cooking part. I just really LOVE the eating bit! My boyfriend went to Uni which I think helped him massively in learning to cook and he has a huge passion for it now. He has made everything from home made burgers in the summer to amazing meals like fajitas and home made Mexican Green salsa.

So here is one of his masterpieces: BBQ Pulled Pork Sub’s.

He marinated the pork shoulder in gravy and BBQ sauce for a few hours in our new Waitrose dish. The Pork was checked every so often to turn it over and make it lovely and soft throughout. He put a smidge of coriander in with it as well to give it some more flavour.

To finish it off he placed 2 large subs in the oven to warm and toast slightly then put a thin layer of cranberry sauce on the bread. I know you’re all thinking CRANBERRY SAUCE, Really?? I was apprehensive at first too but soon changed my mind. It was so complimentary to the pork. We added some salad and cheese and a squirt more of BBQ sauce and eh voila! A masterpiece don’t you think?? And here was the finished product…

Getting Fit:The Healthy Way

Nearly all people will have made a New Years Resolution to get fit this year, and I can’t lie although I never said it out loud I definitely said it in my head. (Mad I Know!) However I am not one to jump on the bandwagon of a fad so easily or do any extreme dieting. I have done this many a time in years gone by and learnt the hard way that it’s no good for your body or you general well-being. I’ve finally accepted myself for me after years of tormenting myself over my weight etc.

My guide is how to get fit the healthy way and simple things that you can do that will make a difference to your health.

Firstly its important to drink as much water as you can. I don’t mean sit with you head under the tap, but throughout the day try and drink a few pints of water. You will be refreshed and will help with you body and skin.

Next its important to try and do some exercise! There is no point cutting out foods and dieting without balancing out with exercise. I walk to work every day and back which gives me about 40 mins of exercise a day. I also try and do something on my day off whether its some yoga or even going on the Wii fit.

Don’t believe everything you see on the label and i don’t mean packaging. You can cut out certain things like carbs or all sugar but inside your body needs small amounts of lots of things. It’s good for you to have everything in portions.

Lastly I will refer to hyped up pills etc that promise to drop weight with a click of your fingers. Having never tried them I can neither confirm or deny their guarantee but what I will say again is if they are to work you will be expected to exercise as well and eat healthy. Don’t expect to eat take-away’s and junk food and them to work with that.

What I’m Looking forward to…

I did a small post about New Year and my resolutions for this year which is great if I can manage to stick to them! So I thought it would be a nice idea to blog about what I’m looking forward to this year as it looks like it might be a busy one.

The start of this year has already been insane and we are only a week in! ARGH! I’ve had a hectic work schedule and things with the house have been going back and forth which is incredibly stressful. I will start by mentioning that I’m going away with Bob to Lagos, Portugal for 2 weeks with his parents for a nice holiday. I haven’t been before but Bob has and it looks absolutely beautiful. Needless to say, I will be doing a post on it after I’m back to share with you all.

We also booked ourselves tickets for the Rugby Union World Cup which is gracing us in the UK this year. The tickets for England were crazy expensive so we will be cheering them on from home or the pub I think. Instead we managed to book tickets to the reigning champions (The New Zealand All Blacks) vs Tonga. So as you can imagine, this will be amazing and we will get to enjoy 2 different Hakka’s.

I’m also eyeing up another week’s break for later in the year for just Bob and I. Hopefully we can sneak away and enjoy a rest somewhere that we haven’t been before.

Hopefully my house sale goes through but as I mentioned before, its currently all a bit of a headache 🙁

Other than this, I’m really excited to try and develop this little blog some more and gain some more followers hopefully who like what I write. I’m hoping to get promoted as well (as is everyone) This is something I’ve been working towards for the last 12 months at work and I really would love it to pay off this year.
