When I was pregnant, I read lots of guidance telling us to batch cook meals as we would find it difficult to eat in those first couple of weeks.
Did I cook anything in preparation for my child’s arrival?
No, I did not!
A couple of weeks ago I was offered the chance to review a Riverford Organic Recipe Box which includes all the ingredients you need to cook 3 delicious meals, something that would have been very handy in the first couple of months as parents.
First up on the menu was a yummy sounding Chicken & Red Pepper Cacciatore

This was a delicious meal and the butter bean mash is something we will definitely cook up again especially as a healthier alternative to potato mash. The ingredients were plentiful and it made a huge amount of food for 2 people. If we made the whole meal again, we wouldn’t add the olives next time as neither of us are huge fans but are glad we gave them a go in this meal.
