The other week I did a whole baking feature showing off my millionaires’ shortbread recipe and photos. As much as I enjoy baking, sometimes I want to have freshly baked goods in the house but just really can’t be bothered.
Let’s face it, it’s nice to pretend to be the domestic goddess sometimes and just scrape by making minimal effort….
Bob’s job means he can come home with all sorts of products sometimes and a couple of weeks ago, one of said products included Dr Oetker Bake in the Box Loaf Cake Mix in lemon and poppy-seed flavour.
This happens to be one of our absolute favourite cake flavours so I was excited to see if it really was as easy as just adding milk like it says on the box.
Preheat the oven 170 degrees before removing the cardboard lid and tip the mixture into the box.
Add 100ml of milk to the mixture in the box before mixing it up. I chose to add Soya milk to this as Bob and I rarely have dairy milk in the house nowadays and use soya or coconut milk instead.
Place the box in the centre of the pre-heated oven for 10 minutes
Remove the box and score down the middle of the mixture with a knife before putting the box back in the oven for another 10-15 minutes or until golden brown.
Remove the loaf cake and check it is cooked through with a skewer or knife. Allow to cool and once cooled, remove the packaging before placing on a plate and dishing up.
An easy way to play the domestic goddess, have a good loaf cake to eat with your brew and impress those around you. It’s up to you whether you admit how you made it or not….
